Skirt steak is similar in taste and texture to flank steak, offering a robust beef flavor with distinctive grain patterns. It can be sliced thinly and stir fried or left whole and grilled for exceptional results. This versatile cut excels with marinades, which enhance its natural flavors while tenderizing the meat. The pronounced beef flavor makes it ideal for fajitas, carne asada, or as the centerpiece of a steak salad. 

For optimal tenderness, grill hot and fast, reaching medium-rare in just 3-4 minutes per side at high heat.  Slice thinly against the grain after cooking and allowing a brief 5-10 minute rest period to redistribute juices
