Shredded Beef
This is a great recipe when you need to have something ready to go. Budget friendly, delicious, and easy easy to prepare. This makes a big batch.
3 pounds stew meat
2 large onions - thinly sliced
salt & pepper
1 cup chicken broth
Crock pot, slow cooker or an electric skillet work well here, although the electric skillet requires supervision. Brown the onions in olive oil with salt and pepper, once browned remove and brown the stew meat - this should be done in two batches. Once the stew meat is nicely browned put the meat and onions in the slow cooker and cook on low for 8 hours. You may need to drain any excess liquid off before shredding. Shred the beef pieces with forks and add your favorite BBQ sauce.
Some notes:
This is great if you have time in the morning to get things started, then it's hands off.
If you have an electric skillet it's well worth using if you have the time to babysit it. For me, it gives the best results in about 4 hours but can't be left unattended.
This recipe will give you enough for a crowd or for a family with some leftovers.
